Pomegranates & Chocolate….

Does that combination seem odd or delicious to you?

If you are raising an eyebrow right now, perhaps you could consider trading in any judgments that might be developing, for a bit of curiosity. 

If you like these too lovelies separately, chances are you will LOVE them together!

With Halloween on the horizon & pomegranates being known in Greek mythology as the “fruit of the dead”, today’s recipe is a really fun one to include on your party treat trays or spooky gatherings!

The enjoyment doesn’t stop there though.  This simple, delicious (and yes, even nutritious!) dessert is a hit throughout the entire holiday season.

One of the oldest fruits known to humans, pomegranates have a vast list of health benefits.  Everything from remedies for digestion, to healing skin ailments, to heart disease and cancer prevention…these powerful little berries (yes berries, not seeds like you’ve probably always known them as) are tiny but very mighty!

But maybe before you start learning more, you should whip up a batch of these decadent bites to snack on while you explore!

Pro Tip: This recipe is easily doubled, tripled, or quadrupled!

Pomegranate Chocolate Bark

(Just 2 ingredients!)

Ingredients

  • 1  medium/large pomegranate
  • 1/3 cup semi sweet vegan chocolate chips

Instructions

  • Remove the berries from the pomegranate peel and pulp. Dry the berries as much as possible, while also being careful not to crush them! Watch the reel below to see the easiest and least messy way to do this!
  • Once the berries are dry, melt the chocolate. You can either do this with 30 second increments in the microwave, or the double boiler method. To be honest the microwave is easiest and least messy, but I know not everyone uses one so melt however your heart desires!
  • Set aside about 2 TBS of the berries and pour the chocolate over the rest. Stir quickly to coat as the chocolate will start to seize and harden quicker with the little moisture still on the berries.
  • Spread onto a parchment lined cookie sheet and top with the reserved berries, pressing them into the chocolate. Put in the fridge for 30 minutes to fully set. Break the bark into bite size pieces. Enjoy immediately or store in an airtight container in the fridge.

More Pro Tips!
  • Add more delicious! Feel free to stir in other things like shelled pumpkin seeds, chia seeds or lightly sprinkle with course Himalayan Salt.
  • Most any chocolate you prefer can be used, but no matter which you go with, be sure berries are as dry as possible.
  • For best results, do not freeze. Once thawed the pomegranate will ooze moisture making for a runny mess.
